After breakfast, we met Cinzino again, so he could take us to his house and meet his wife Maria. She had been away and returned only last night. They have a lovely home and she made it clear, she doesn’t speak a word of English!!

After our visit, we decided to pack a picnic lunch and go up to the national park. It was beautiful and cool in the woods. We feasted on cheese, bread, wine, prosciutto, peaches and biscotti. It doesn’t get much better than this!!


Now it is siesta time, and later we are having coffee with a Dominic Tufaro that we met up at the chapel this morning. It turns out, that John C was in his wedding back in ’63. He’s one of the cousins who lived in New Mexico. I find all these connections a little strenuous to keep track of.

Well we all fell asleep and missed our rendezvous with Dominic! Postponed it til tomorrow at 4. The chapel was locked up tight so that is also on hold.

Now – for dinner!!!
First – a prosciutto and melon to die for! The melon was puréed and rolled in a slice of prosciutto and garnished with a dollop of whisked ricotta, mixed with honey!!
Second – a scrambled egg/pancetta/red pepper combo served in a pastry filo boat – OMG!!
Third – 4 flour pasta (made with 3 fingers ) flavored with asparagus . A very light asparagus and lemon sauce topped with carrot garni completed the dish.
Main entrée – I might try this one – a pistachio encrusted chicken breast to die for!!!!
I was falling asleep and missed dessert. I heard it was fabulous!! A lemon torte!!
We will need a wheelbarrow to transport us around!!!
